FINDS offers in-depth pairing for cheese and wine

FINDS a magical zone of discovery tucked into your GreenWise Market.

This is what happens when grocery and deli combine efforts to provide palate pleasing provisions. The space features an olive bar, an assortment of dried meats, amazing cheeses, local beers and wines for every budget. But it’s more than a place to pick up the stars of your next charcuterie platter.

“FINDS is really an artisan cheese and wine section, with more in-depth pairing information and a personal experience,” said Cheese Specialist Bryce Segler, #1573, Tallahassee, Florida.

Bryce works side by side with Wine Specialist Trevor Bond to help customers find the perfect wine to pair with the cheese they’ve selected.

“I rely on Trevor for his expertise,” said Bryce. “We tag team. He’s the other half of the department.”

“The majority of my time is spent interacting with customers and providing samples,” said Trevor. “The ability to try before buying is a definite plus.”

Both Trevor and Bryce enjoy sharing their in-depth knowledge and showing customers how to have fun with meat, cheese and wine pairings.

“Some people aren’t fans of big reds, but pairing makes them shine,” said Trevor. “Cheese and fatty meats coat the inside of your mouth to prevent the harshness. When you try the wine, take a bite of cheese then try the wine again, it’ll taste completely different.”

“When a customer experiences a good pairing, it’s like that scene from ‘Ratatouille’ when the rat bites into a strawberry and cheese at the same time,” said Bryce. “It’s like fireworks go off.”

  • Beehive Cheese Barely Buzzed  — A cow’s milk cheese with espresso and lavender rind
  • Ski Queen Gjetost Cheese  — A sweet, 130-year-old Norwegian recipe meant to be eaten for breakfast. “You can’t tell the difference between it and caramel.”

Trevor

“My favorite wine changes with the seasons and what I’m eating, but these are my favorites right now.”

  • Urgency Pinot Noir  — A red fruit and juicy plum red wine with just a smidge of white pepper on the finish
  • Petit Petit by Michael David  — A whopper of a red wine with pure black fruit and vanilla
