Getting to the ‘gouda’ part

Cheese Specialist Ryan Metz, #1701, Ponte Vedra, Florida, breaks down what it means to be a cheese specialist at GreenWise Market. “Curd” it get any better?

Some start their day to the smell of baking bread, but for Ryan, the scent of cheese first hits his nose in the morning. A typical day begins with him making fresh mozzarella for FINDS, a task that takes plenty of patience and repetition.

“Every day, I start with a batch of mozzarella curd that I crumble into a bowl and add the boiling water in with a ladle,” said Ryan. “From there, it’s a cycle of mixing the curds with the water and then draining. I repeat this process until it’s ready to be kneaded into a ball and dropped into cold water.”

Since joining the GreenWise Market team last year, Ryan has provided customers with many “unbrie-lievable” cheese suggestions. Whether the customer has specific ideas in mind or would prefer a surprise, Ryan enjoys the fun of discovering their tastes.

“One of my favorite parts of my job is talking with customers and figuring out what their preferences are, even if they might not know,” said Ryan. “Whether it is a premade charcuterie board or one I create from scratch, I love using my creativity and having fun finding the perfect combination for our customers.”

Ryan loves the FINDS environment and how each day brings a new adventure.

“I love seeing customers come back in after eating their charcuterie boards and telling me just how much they loved them,” said Ryan. “It is one of the most rewarding things and reminds me why I love to work at GreenWise Market where I can express my creativity and passion.”
