Specialty subs with better-for-you options

Publix has established a well-known reputation with our legendary subs. That reputation is thanks to the constant work our deli team puts in creating new recipes that will attract a variety of customers. Like those with health in mind.

It’s no wonder customers choose our deli subs, with our many unique recipes, over any sandwich shop’s subs. Category Manager of Cold Prepared Foods Ali Polat works with his team to continually develop exciting new recipes that will satisfy our customers’ taste buds.

“The cold prepared foods team collaborates with marketing to conduct studies of new products to help us optimize our variety of sub offerings,” said Ali.

One preference identified through these tests was the increased demand for sub options to support healthier lifestyles. As a result, Publix created a specialty subs category — with better-for-you recipes and a new menu board — which now makes up about 25% of our total sub menu board space.

These options include:

  • Greek Sub (vegetarian) — Lettuce, tomato, onions, banana peppers, cucumber, avocado, red pepper hummus and feta cheese. Your choice of toppings and bread.
  • Garlic & Herb Tofu Sub (vegan) — Garlic and herb tofu crumbles, Italian spices, cucumber, tomato, baby spinach and avocado vegan ranch dressing. Your choice of vegetables and bread.
  • Baked Chicken Sub — Blackened or citrus chicken breast with your choice of cheese, toppings and bread.
  • Boar’s Head options — Low sodium ham, roast beef or turkey with Boar’s Head low sodium Swiss cheese and your choice of toppings and bread.

In addition to these recipes, Publix has developed a new program called Make Any Sub a Salad. Just as the name suggests, customers can select any sub on our menu board and have it made into a salad. Instead of using a Publix Bakery sub roll, the sub ingredients are served on a bed of leafy greens of your choice like spinach or shredded lettuce. Select locations also have additional salad bases available.
