Most of the time, when a customer begins to plan their holiday meal, the first question that comes to mind is, “What kind of meat will I serve?” And while many customers have traditions surrounding their holiday dinners, some are looking for new recipes or twists on their old favorites.
“There are so many options for our customers, and the key is finding out what their goals are,” said Category Manager Craig Fisher. “That’s where dynamic selling comes in.”
Meat associates can ask questions to determine a customer’s meal goals. How many people are they cooking for? Do their guests prefer a traditional meal, or are they open to new recipes? Do they have ideas for side dishes?

How to carve and serve your rib roast.
1. After roast has rested for 15 – 20 minutes, position it on cutting board with long bones down. Hold in place with meat fork.
2. Using a sharp carving knife, cut horizontally just above bones to remove. Set bones aside (or discard).
3. Slice roast vertically, starting from the top (or fat side) into ½ or ¾-inch-thick slices.
4. Place each slice on a warm platter, and serve with pan juices.
