How we make it: Our Buffalo Style Chicken Breast Dip

We all know our Publix Deli Buffalo Style Chicken Breast Dip is one of a kind, but did you know many of the ingredients are made from scratch in our Publix manufacturing plants? That’s what makes it unique, with a homemade taste.

How’d it start?

The Buffalo Style Chicken Breast Dip is manufactured in the Publix deli kitchen in Lakeland, Florida. Launched in 2014, this party favorite is our best-selling dip and was originally created as a response to market trends.

What’s it made of?

The delicious dip is full-bodied with a Neufchatel cheese and sour cream base paired with a traditional hot sauce, gently blended with bite-size pieces of chicken breast, fresh-cooked in our smokehouse. There’s about 29,000 pounds of chicken breast used to make 110 batches per week, which is more than 45,000 containers of dip. The sour cream and mayonnaise are made from scratch in-house. Even the hot sauce bottles used in the dip are all opened by hand.

Once the scratch ingredients are made, they’re blended with other ingredients like spices and chicken to make 54,000 pounds of chicken dip 2 days a week. Then it goes into the final packaging in microwaveable containers, loaded onto pallets and sent to our stores. Conveniently located in our delis, our Buffalo Style Chicken Breast Dip is tasty warm or cold and can be served with tortilla chips, crackers or any other kind of chip.

What’s our deli kitchen?

When the deli kitchen opened in 1984, it was about half the size it is now and only produced a handful of our current offerings. Today, over 425 associates work at the 135,000-square-foot plant. There is a U.S. Department of Agriculture (USDA) inspector on-site every time we’re making meat products, which is every day, and it’s the only Publix facility that can process meat.

The deli kitchen delivers much more than just chicken dip, such as 3 different chicken salads. It’s also where the Publix-branded deli meats in the service case are processed and packaged, along with a variety of ready-to-eat barbecue items like smoked pork, ribs, sausage and chicken.
