Ever wonder how we create our NFL team subs? Well, here’s the tea!
For the last 10 years, Publix has partnered with the Atlanta Falcons, Jacksonville Jaguars, Miami Dolphins and Tampa Bay Buccaneers to bring the taste of each team to our famous Pub subs.
“We try to make the initial recipes unique to each team with characteristics about that market,” said Business Development Director of Deli Allen Brown. “Each team calls it their own.”
Creating a sub is a process that includes the brand marketing team researching the cities and customers to find the local flavor and flair.
“This can be achieved by working with restaurants in the area to see what flavors are most popular or researching the demographics and what resonates with locals the most,” said Allen.
Our chef team hosts a kickoff meeting where the deli, meals and regional marketing teams meet and come up with some ideas. Then, the chefs develop the recipes.
“We get a chance to come in and try what the chef and meals teams put together and discuss what we did or didn’t like about each,” said Regional Marketing Director Amanda Vera. “We have these tastings until we choose a favorite.”
From there, consumer tests are completed to see how well the recipes resonate with locals. If they aren’t successful, it’s back to the drawing board.
Once a sub recipe is approved and ready to go, the football teams get a chance to try the subs before they go live.
“We like to get the teams engaged and excited about the subs,” said Amanda. “This gives them a different, delicious way to celebrate the start of the season.”
